Recipe: Halloween Ghost Meringues

I look forward to Halloween every year because it’s one of my favorite holidays. I love dressing up and getting into the spooky spirit.

This year, I plan to throw a Halloween party and for the past week, I’ve been experimenting with Halloween recipes. I saw pics of these ghost meringues on Pinterest, a super simple Halloween cookie that melts in your mouth, and I thought…perfect! These ghost meringues will bring a smile to kids and adults faces this Halloween. They’re totally adorable, so easy to make and will look great arranged on a festive platter at my Halloween party.

Halloween Ghost Meringues

Ingredients

  • 4 egg whites
  • 1 cup of caster (super fine) sugar
  • 1 tsp of white vinegar or 1/2 tsp of cream of tartar
  • 1/2 tsp of clear vanilla extract
  • black food gel

Instructions

Step 1. Preheat oven to 250°F. Line 2 baking sheets with non-stick baking paper and have it lightly greased.

Step 2. Add egg whites, white vinegar, and vanilla in the bowl of an electric mixer and whisk away on medium speed until frothy.

Step 3. Gradually add sugar, allowing 30 seconds between each addition and bump up mixer speed to medium high. Whisk for a further 7 minutes, scraping down the sides of the bowl, until stiff peaks form.

Step 4. Spoon the mixture into a piping bag fitted with a 1.5cm-nozzle and pipe 12 ghost shapes onto baking sheets.

Step 5. Bake for 30 minutes, then turn off the oven and allow the ghost meringues to completely dry before removing.

Step 6. Once cooled, use black gel for eyes and mouth.
