Noodles + Cauliflower: Caulifloodles

Lately, I’ve been trying to cut down on carbs and incorporate more veggies into my diet. It’s hard for me to resist carbs especially when I go out to eat and sometimes getting my daily serving of vegetables is not always enjoyable. Recently, I learned of a restaurant near my home called Noodles & Company that serve noodle dishes made out of cauliflower.

Noodles & Company new dishes sound perfect for someone like me who tends to overeat on carbs when eating out. So, I stopped by Noodles & Company with my mom to check out their cauliflower-infused dishes.

Noodles & Company Caulifloodles

This is actually my first time trying a pasta dish made out of cauliflower. I’ve tried a cauliflower-crusted pizza in the past and had no complaints so I was super excited to try a noodle version.

They offer two new caulifloodle dishes to try or you can substitute their cauliflower noodles into any regular or kids-sized entree at no additional cost.

We decided to try their two new seasonal dishes in a regular size bowl: Cauliflower Rigatoni in Light Onion Cream Sauce and the Cauliflower Rigatoni Fresca with Shrimp.

This by far is my favorite dish! I’m a sucker for pasta dishes with a creamy sauce that’s coated well. The rigatoni had roasted zucchini, mushrooms and spinach mixed in too as well as parsley and MontAmore cheese.

Cauliflower Rigatoni Fresca with Shrimp

This dish is a fresh and dry pasta with balsamic vinaigrette, olive oil, roasted garlic, onion, tomato, spinach, parmesan, and shrimp. It was delicious! The shrimp was so juicy and the rigatoni was full of flavor. You could definitely taste the vinaigrette!

After trying both, I didn’t notice a difference between the caulifloodles and real pasta. My mom didn’t either. Both the noodles had a chewy texture similar to traditional. We simply couldn’t believe these dishes were made out of cauliflower. It was comforting to know that I could enjoy a cauliflower-infused rigatoni that has the same texture and taste as traditional noodles, but with way more nutritional value. It’s amazing!
