Christmas has finally come and gone. Yippeee! I’m so thankful for all the good times spent with family and friends; however, I’m also relieved to not have to think about Christmas gifts for another year. The holiday season can be quite stressful and it’s still not over yet, well…. at least for me, since New Year’s Eve is just around the corner. Despite all the craziness, taking time out of my day to take a #BlueberryBreak is all I need to re-energize and de-stress.

Fresh blueberries are a simple ingredient that brightens just about any meal. They’re healthy, refreshing and I just love adding them to my yogurt parfaits!This Blueberry Yogurt Parfait is the perfect #blueberrybreak to enjoy when the holiday season is bringing you a lot of stress. I mean seriously….how can you go wrong when you have a snack that looks like this?  Fresh blueberries gives off a savory and sweet flavor that I love. Then I add in a little granola crunch, slices of banana and a layer of the dreamiest vanilla yogurt. Now you have a layered fruit and yogurt parfait that looks and sounds like dessert but is totally good for you as well.

Blueberry Yogurt Parfait

Ingredients

  • 1/2 cup of blueberries
  • 1/2 banana
  • 1 cup of vanilla non-fat greek yogurt
  • 1/2 cup of granola

Makes: 1 parfait

Instructions

Step 1. Spoon 1/2 cup of greek yogurt into a glass.

Step 2. Top with 1/4 cup of granola, sliced bananas, and 1/4 cup of blueberries.

Step 3. Repeat to make a second layer using the remaining ingredients.

Step 4. Serve immediately or refrigerate up to 24 hours.
