Recipe File: Keto Crockpot Chicken Tacos

Now that the holidays are here, I’m being more conscious with my eating habits. I tend to overindulge a bit during the holiday season which is fine, but sometimes you just need a break.

Tacos are one of my favorite go-to dinner meals when I’m looking for something quick and easy. It’s also great for meal prep! I love indulging in tacos and now I can enjoy a healthier version while eating more veggies!

CAULIPOWER Cauliflower Tortillas are made with real cauliflower and are vegan and dairy free. They’re available in Original and Grain-free and can be found in refrigerator or freezer aisle of your local grocery store.

Keto Crockpot Chicken Tacos
This is a taco recipe for those living and enjoying the keto-leaning lifestyle. It’s quick, easy and super delicious! Since the chicken is made in the crock pot, it’s comes out super tender that it just falls apart. It’s one of my favorite chicken taco recipes and it taste amazing with the CAULIPOWER Cauliflower Tortillas.
- CAULIPOWER Cauliflower Tortillas
- 1 pound of chicken thighs boneless & skinless or chicken breasts
- 2 avocados
- 2 cloves of garlic minced
- 1 tbsp of chili powder
- 1/2 tsp of garlic powder or onion powder
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 3/4 cup of prepared pico de gallo
- 3/4 cup of sour cream
- 1 tbsp of lime juice
- 1/2 cup of cotija cheese (optional for garnish)
- 1/4 cup of chopped cilantro (for garnish)
Serving Size: 6-8 tacos
Instructions (For Chicken)
Step 1. Combine the dry seasonings: chili powder, garlic powder, salt, and black pepper in a small bowl.
Step 2. Place chicken in a crockpot (at least 3-4 quart size).
Step 3. Top with dry seasonings on both sides of chicken.
Step 4. Add the minced garlic, lime juice and 1/4 cup of water and mix to combine.
Step 5. Cover and cook on low for 4-5 hours.
Step 6. Remove chicken and use two forks to shred it.
Instructions (To Make Tacos)
Step 1. Once the chicken is done, set it aside.
Step 2. Follow package instructions on how to heat CAULIPOWER Cauliflower Tortillas via skillet or microwave.
Step 3. While waiting for the tortillas, grab a shredder to shred the cotija cheese.
Step 4. Once tortillas are done, serve the chicken in the center of each tortilla.
Step 5. Top with sliced avocados (or guacamole), pico de gallo and sour cream.
Step 6. Add chopped cilantros and/or cotija cheese for garnish.
