Keto Almond Butter Cookies
- Prep time: 5 minutes
- Cook time: 10-13 minutes
- Makes 12-15 cookies depending on size
- 1 cup almond butter
- 2/3 cup Swerve brown sugar
- 1 whole egg
Step 1. Preheat oven to 350 degrees and line a pan with parchment paper.
Step 2. Grab a bowl and mix all ingredients together.
Step 3. With a small ice cream scoop or by hand, take a tablespoon sized amount and make into a ball and place on the parchment paper. Make sure to leave 1.5-2 inches space between each cookie so there’s room for expansion.
Step 4. We’re almost done. Last step is to use a fork to press down in both directions on each dough ball. Your keto almond butter cookies should look like this now before putting in the oven.
Step 5. Cook for 10-13 minutes. Make sure to keep a close eye on them so they don’t burn.
